Since Texas Longhorn beef is naturally lean it cooks quickly. Because there
is less fat to insulate the meat from the heat the cooking time is shorter
than other beef, so be careful not to overcook it.
It is best to either cook longhorn beef over lower heat or for less time
than you would cook other meat. Check on the meat frequently to make
sure it does not overcook.
Longhorn beef contains enough fat to cook to excellence, so it never needs
additional cooking fat added.
